I find staying in the airport building safest. Good Security most the time.
If u do venture out. Find the nearest McDonald they have 1st aid kits if u have a medical emergency. Somthing our emergency services dont have.
If u venture out. Find a Virgin Active Gym. They have Security controlled access. Incase u feel unsafe go there. Safer than going to most police stations. Call your embassy before calling the police.

Dave, I second what Greg says about the tented camps in Kruger, esp. Tambotie. I've stayed at Tambotie and it was great if you like a bit of privacy ... there's strips of bush between each tent or were when I stayed ... a few years ago now ... and much more of the feeling of being in the wilderness. Otherwise head for one of the smaller camps as the big camps are crowded. Oddly enough they aren't noisy though, I suppose everyone is tired and/or thinking of an early start the next day to get the best game viewing time.
The best amount and concentration of game is in the south part of the park, esp around the river. Best time temeprature wise (and for viewing) is in winter but book ahead ... I took a chance on return tickets once and eventually had to stay outside the park and come in each day as a day visitor which meant queues for over an hour each day. Booking online is easy and works fine ... I've done it and I'm no expert!
If you like beaches and like to think out of the box, the Wild Coast (Transkei) is awsome, but avoid Port St Johns which has become the informal disco capital of SA ... unless you like informal discos that is, but then better bring your own bodyguard complete with Doberman. The beaches are minus "development" and self-catering is the best way to go (though there are a few hotels), but phone places first and check up re condition of roads (that's why they are undeveloped). Otherwise Kwazulu-Natal beaches are pretty nice and there's usually more company available.
Think seriously about going self-catering, it widens your possibilities considerably. And you can spend what you save on hotels on eating out at the local restaurants.
Sly: when it comes to security, the racecourses are one of the safest places in any big city. Even as a woman on my own, I never worry about being mugged once I am on course.

He might get chowed by a leopard, squashed by an elephant, impailed by a hippo, torn to pieces by a pack of wild dogs. Failing that, the mozzies might give you malaria, and the sun might give him sun stroke. Only joking, I LOVE the Kruger park.
