I can only speak about bookmakers based in the UK and Ireland. Unfortunately there is no such thing as 'the perfect bookie' unless, as Bob says above, you keep losing money to them (in which case they will do all they can to stay in your good books and keep you as a customer). If you are a winning punter, however, you have to accept that bookmakers don't want your custom in the long run as it costs them money and the accountants who run most of them these days get very upset about that. Bookmakers generally have two ways of telling you to p*** off. They will either suddenly close your account so that you can't log in and send you an email 24-48 hours later telling you that your account has been closed permanently as a 'trading decision', i.e. they've come to the conclusion that you are going to cost them money if they allow you to continue betting with them or, put another way, they've realised that you are simply smarter than their traders are. The other method they employ to get rid of you is to limit the amount you can bet with them to such small stakes that you can't make any real money and so take your custom elsewhere (e.g. one such bookmaker will now let me have all of £1-67 on a 4/6 shot). Such bookmakers then sometimes proudly claim that they never close winning accounts :P

In short, if you are a consistent winner, then no bookmaker will want your custom for very long and you will be forced to lead a nomadic punting existence, moving from bookmaker to bookmaker as successive operators either close or severely limit your account. The good news is that there are still a decent number of reputable bookmakers to choose from, so you are unlikely to run out of options. Just be careful to check out the feedback on and reputation of any bookmaker you are looking to move on to before you deposit any money with them, as, although there are lots of reputable online bookmakers out there, there are plenty of dishonest ones too.
